Finest Cannonau grapes make this wine unique. Caposardo is caracterized by the incredible intesity of its fruity aroma, its soft ness and balanced taste.

Grape Varieties: CANNONAU OF SARDINIA D.O.C 100%.
Production Area: Anglona (SS) Sardinia, Italy.
Soil composition: Soil which tends to e loose and medium textured with a good limestone base. Drainage is excellent through the year.
Altitude: 150 metres above sea level.
Climate: Always windy. Warm temperate in the summer with a firm in temperature between day and night.
Never particularly harsh winter, and tempered by marine currents.
Production per hectare: 7000 - 8000 kg/ha.
Vine training system: Spurred cordon.
Plant density: 4.000 plants/ha
Harvest date: End of September.
Vinification: The best grapes Cannonau from its own vineyards, cultivated bred to have a low yield per ectare, are trasported to the winery in small baskets.
Fermentation temperature: 28-30° C.
Fermentation on period: 10-20 gg.
Aging: The aging for this type of wine is made in barrique and cement and for some months on autochthonous yeasts, which leads to a marked fruity taste and a wonderful sapidity.
Development in the bottle: 7-10 years.
Colour: Deep ruby red.
Bouquet: Red berries and sot balsamic notes. Slightly spicy.
Taste: Full-bodied, moderately warm and soft. Silky tannins and sweet.
Food and wine pairing: Red and white meat, semi-mature cheeses and grilled fish. Serve in large goblets at a temperature of 16-18° C.
